Easy Caprese – On skewers with veggies – Fancy appetizer

The completed recipe ready to serve

I made this for a baby shower and they were easy and people loved em. I used fresh basil and oregano from my garden and I had so many roma tomatoes, it just seemed practical. I picked up the bocconcini and olives from an olive bar at Giant Foods Market and they were already marinated – you can put whatever on the skewers, but I added cucumbers and marinated mushrooms for variety incase people dont much care for cheese and tomatoes.

The standard caprese on a stick is just basil, motzeralla balls and cherry tomatoes marinated and drizzed with olive oil, but I went a little beyond that.

Caprese on a Stick Recipe:

1 cucumber, cut into thick slices and cubed

2  boxes cherry tomatoes (red or yellow) or small roma tomatoes

12 bocconcini (small mozzarella balls), about 8 ounces

small marinated mushrooms

fresh oregano

1 bunch basil

salt (coarse ground or Kosher)

black pepper

extra virgin olive oil oregano (use fresh if you have it, if not dry works well)

Kalamata olives, no pitts

1 smashed garlic

long pointed wooden skewers

Combine the garlic, salt, pepper flakes, a bit of chopped up basil & oregano and EVOO in a medium glass bowl. Cover and microwave on high until the garlic is golden, about 2 minutes. Cool. Add the bocconcini and precooked little mushrooms and refrigerate for at least 1 and up to 24 hours.

Thread a yellow cherry tomato onto a skewer, wrap a bocconcini in a basil leaf and add to the skewer, then finish with a red tomato. For a dramatic presentation, use both roma and cherry tomatoes or different color tomatoes. Halve the top cherry tomato and use it as a stand for the skewer.

Repeat with the remaining cheese and tomatoes, and mushrooms . Save the oil for a dipping sauce and serve with a small bowl of kosher salt.

yummmm. Enjoy and post your pics on FACEBOOK and tag me!

Starting out – Cardio 101 for women

If you ARE going to do cardio, make it as efficient and effective as possible. If you do High Intensity Cardio or High Intensity Interval training, you can get the same, if not BETTER results with a brief 12 – 20 minute cardio session instead of spending two or more hours a day doing it!

If you feel that you need to do more cardio, then you can add a couple of additional 20 – 30 minute moderate intensity sessions to your training week.

Skipping, stair sprinting/running, or rowing, are the next highest calorie burners after sprinting.

You can use a heart rate monitor to make sure you are in your Target Heart Rate zone and also to see how many calories you are burning during your cardio exercise.

My recommended “Cardio Intensive” at home fitness program is INSANITY by Beachbody. You can see a preview of it here : INSANITY PREVIEW

Lemon Peel Seed Starter – Recycle & Reuse

Use a lemon, orange or a grapefruit to start your seedlings.

Do not throw out the peel, just take out in the inside and fill with good soil and start a lil plant of your own. I am very into gardening this year and will be sharing lots of tips in my blog — watch my plants grow , get recipes and follow along!

Plant the entire thing in the ground and the peels will compost directly into the soil to nourish the plants as they grow. Gotta try this! You too.  This is how we can stop taking more from the earth than what we give to the earth.

This is a healthy synergy that wont rob the soil of their nutrients any longer which only robs us from our nutrients when the plants we grow in the soils stop getting what the nourishment they need
